For thirty-one years, Tomas Andersson kept the light burning on Svartholm, a bare rock two hours by boat from the Swedish coast. And yet, when the food finally arrived, almost all was forgiven. The roasted cauliflower starter, served with burnt butter and hazelnuts, was the best thing I have eaten this year. The lamb was cooked with real confidence, pink and resting in its own juices, and the plum tart tasted of actual plums rather than sugar — rarer than you might think. Prices are fair for cooking of this standard: expect to pay around forty euros a head without wine.

Would I return? Yes — but on a quiet Tuesday, not a busy Saturday, and I would ask them to write the menu down. The kitchen deserves a front-of-house team that matches its talent.
